Grilled snapper, charred corn, almond and buckwheat tabouli recipe

Ingredients
½ cup buckwheat, soaked in water overnight
2 cobs corn, peeled
½ cup whole almonds
1 punnet cherry tomatoes
1 bunch flat parsley, washed, roughly chopped
½ bunch mint, washed, torn
3 shallots, washed, thinly sliced
3 tablespoons extra virgin olive oil
Juice 1 lemon
4 fillets snapper approx. 150 g (from a responsible source)
